Hinds-Bock, part of the Middleby Bakery Group, is hosting the How Sweet it is Baking Seminar on Wednesday, May 1 at Middleby's Bakery Innovation Center (BIC) in Plano, Texas.
Designed to provide an educational and hands-on training experience, attendees will learn how ingredients, equipment, and processes can all work together to create consistent and safe sweet baked foods.
The free event is taught in a classroom setting and will offer plenty of opportunities for questions and conversations about current and future industry trends. Attendees will have access to the BIC’s equipment, so they can test out concepts learned in the class.
Lance Aasness, executive vice-president at Hinds-Bock, will be discussing the various options and capabilities of Hinds-Bock filling and depositing equipment when working with conventional and non-conventional batters and mixes. Mr. Aasness will also be reviewing capital investment and ROI. Varimixer’s managing director and chief executive officer Jan Zimmerman will discuss best practices for mixing while Auto-Bake’s president Scott McCally will present a demo on the company’s equipment.
Food safety also is on the seminar’s agenda. Earl Arnold, global food defense manager, AIB International, will discuss the importance of allergen awareness and upcoming Food and Drug Administration compliance deadlines.
On the formulating side, Walden Hodges, senior manager, ingredients, Corbion, will lead a presentation on conventional, sugar-free and shelf-stable and egg replacement ingredients.
Joanie Spencer, editor, Baking & Snack, will also be there to cover market trends within the sweet goods segment, discussing evolving consumer needs and expectations.
