Insomnia Cookies kicked off the month of October with the latest release from its CookieLab research and development department: Pumpkin Cheesecake.

The Pumpkin Cheesecake cookie features the flavors of fall with a spiced pumpkin puree base, crunchy bits of graham cracker and rich cream cheese chips. The limited-time cookie is available in-store and online while supplies last.

Recently, the cookie bakery chain made its vegan and gluten-free chocolate chip cookie available at all locations nationwide for pick-up and delivery for the first time. It had previously only been available in select markets and for nationwide shipping.
